Natural talent with a sense for taste

Portrait of Roswitha Kometer

Roswitha Kometer is a fascinating person. In her kitchen the passionate chef of the 3-star hotel Sonnbichl produces delicacies for up to 30 hotel guests and 20 á la carte guests. And successfully: her restaurant occupies first place in the TripAdvisor ranking for restaurants in St. Anton am Arlberg.

Passion, not theory

Born in St. Jakob, Roswitha Kometer worked in service for 20 years before she and her husband opened the inn “Einkehr” in St. Anton where she – for lack of reliable staff – decided to cook herself. Today Roswitha Kometer is the head of the family’s own Hotel Sonnbichl which was opened in 1998.

The very humble woman tells us: “I read a lot of cookbooks and often tried new things. When I eat out I look closely at how others garnish and present dishes.” Tyrolean specialties and Mediterranean delicacies are her favourite creations. And she loves to let herself be inspired by Austria’s grandes dames de cuisine – Johanna Maier and Lisl Wagner-Bacher.

Seasonal. Regional. Sensational.

The natural course of the seasons plays an important role in the small “Restorantli” in St. Anton. At the beginning of spring the “Green Week” is announced, followed by fresh asparagus, delicious herb-pork and fresh and crunchy vegetables from the region. Fresh farmers’ geese from Vorarlberg are served in late autumn. Regionality is very important for Roswitha Kometer.

The fact that her kitchen exclusively uses meat from the region is a matter of principal. The proper preparation – in kitchen jargon that would be “mis en place” – is key for the versatile chef. Mornings are used to prepare for the evenings’ service. Afterwards Roswitha likes to relax on the ski slopes before returning to the kitchen at 4.30 pm sharp.

First place on TripAdvisor

All this commitment really goes down well with the Kometer’s international guests. The renowned rating portal TripAdvisor currently lists Restaurant Sonnbichl as the number one in St. Anton. And the organisers of the “Kunst- und Kulinarik Festival”, the exclusive series of gourmet events, have taken note of Roswitha Kometer’s skills. Together with four other top addresses the Sonnbichl is part of the beautiful locations that host extraordinarily delicious events.
